From the Americas to cocoa drinks
The cacao tree, Theobroma cacao, is native to South America. Peoples of the Americas cultivated and used it long before it reached Europe. In Mesoamerica, beans were used in drinks and also served as currency among Maya and Aztec communities.

Cocoa entered European history in the sixteenth century. Tastes and preparations gradually changed. During the nineteenth century, plantation expansion in Asia and Africa extended its agricultural geography beyond the Americas.

Pods contain seeds surrounded by pulp. After harvesting, fermentation and drying prepare the beans; fermentation helps develop flavour. Roasting and grinding are later stages in chocolate making.
